KIDS' KITCHEN

KIDS' KITCHEN is for our junior chefs to find fun and easy recipes with each other. Recipes will be posted periodically and we encourage our young campers to share your favorite dishes with us well. Participants who submit a recipe will be elligiable to have their name placed in a draw to choose something from our *KIDS' KORNER TREASURE BOX. (*Please see information on our KIDS' KORNER page.)

FAVOURITE HOLIDAY RECIPES

It's that time of year when we dig out family recipes that everyone loves to eat. Kids' Korner invites you to send in the recipe of your favourite holiday dessert or side dish. Your recipe will be posted on our KIDS' KITCHEN page and your name will be put in a draw for a prize. You can send a picture as well if you wish.

The activity is open to all Stonewall Acres site-owners' children (including nieces, nephews, grandchildren) The deadline is December 24th to be eligible for the draw.

HAYDEN'S SUPER SIMPLE SUGAR COOKIES

INGREDIENTS

1 cup (250 ml) butter, softened

1 cup (250 ml) white sugar

1 egg

1 teaspoon (5 ml) vanilla

2 teaspoons (10 ml) baking powder

2 ¾ cups (675 ml) flour

METHOD

Preheat oven to 400 degrees F (200 C). Using an electric mixer, cream butter and sugar in a large bowl. Beat in egg and vanilla. Sift together dry ingredients then add them 1 cup at a time, mixing after each addition. Don’t worry that the dough is very stiff.

On a floured surface, roll out half the dough into a large disk, about 1/3 of an inch thick, or flatten with the heel of your hand. Cut into shapers with cookie cutters or into circles with the rim of a clean juice glass. Make sure all the cookies are about the same thickness to ensure they bake evenly. Repeat with the rest of the dough.

Place cookies on non-stick baking sheets and bake on the middle rack of the preheated oven for 6 to 8 minutes, or until light golden. Remove from the oven and cool the cookies on racks.

NOTE: This dough also freezes well. Just be sure to allow dough to come to room temperature before rolling it.

GLAZED ICING

If you want to ice the cookies, stir together 1 cup (250 ml) sifted confectioner’s sugar with 2 tablespoons (30 ml) water or lemon juice to make a smooth icing. Once the cookies have cooled, spread with glaze.

YIELD: 3 dozen

JAYDE'S FRUITY SMOOTHIE

INGREDIENTS

Milk 1 cup (any type)

Blueberries 1/4 cup

Banana medium

Apple 1/2 (remove peel and seeds)

Variation: Strawberries, pineapple,

mango

METHOD

Put milk and fruit in blender

Push button

Make sure all the fruit disappears

Drink (yummy). Makes 2 servings

*Use fresh or frozen fruit. Add a few ice cubes

if using only fresh fruit and a 'frosty' drink is desired.
